Oysters

About

There is evidence to suggest that humans have been engaged in a love affair with oysters since the Stone Age.

They were considered a delicacy by wealthy Ancient Greeks and Romans who became the first civilisations to begin cultivating these exquisite shellfish. The Greek Goddess of Love Aphrodite is even said to have been born from an oyster, which is where their reputation for being an aphrodisiac originates.

But do oysters really live up to the hype? Absolutely!

Our sustainably sourced oysters have a unique and complex flavour that delivers a fresh, salty taste of the sea that will keep you going back for more.

How to Cook

Oysters are traditionally eaten whole and raw.

They are delicious all on their own, but a mignonette sauce of white and red wine vinegar and finely diced shallots is a classic accompaniment.

What to Drink

Champagne. Enough said.

Notes

Yes, oysters are alive when eaten raw. In fact, eating a dead, raw oyster would be a very bad idea indeed.

The shells of healthy oysters will be tightly shut before being shucked. If any are open and remain open after being given a little flick, discard.
