Skate Wing
Skate is an ancient fish belonging to the ray family.
It has a high collagen content which gives it a unique texture when cooked and makes it a good option for anyone looking to give their skin and joints a healthy boost.
Skate flesh is a soft pink when raw and turns off-white once cooked. Its flavour is similar to that of a scallop.
How to Cook
Skate wing is often overlooked but we think that’s a real shame.
It is delicious, especially when simply baked with cherry tomatoes, olive oil, lemon, and capers, and served with a healthy side of steamed greens.
Just be careful not to overdo it as skate can quickly start to fall apart when overcooked.
What to Drink
Meaty fish-like skate pairs well with most Sauvignon-based white wines or a more aromatic Alsace Riesling.

Storage
All fresh fish and seafood should be stored in the refrigerator at a temperature of between 1 and 4°C and consumed by the date given on its packaging.

All orders will arrive within 1-2 working days, except for some local deliveries within Sussex which are shipped the same day via our own transport.
