Coley, also known as saithe or coalfish, is an inexpensive and underutilised member of the cod family.

Its mild flavour and medium-firm texture make it a great, sustainable alternative to cod and haddock, which have both previously fallen victim to overfishing.

Don’t be put off by its slightly dull-looking flesh when raw. Once cooked it will be just as pearly white as its cousins’.

How to Cook

Coley is so similar to cod and haddock that it can be used as a substitute in just about any recipe that calls for them.

You could also give it a try in Thai fish cakes. Blend the fish into a paste in a food processor then add finely chopped coriander, spring onions, garlic, and lemongrass and bind with coconut milk or egg. Shape into patties, fry, and serve with a sweet chilli dipping sauce.

What to Drink

If you’re going down the Thai route, fruity white wines such as Alsace Pinot Gris, Gewürztraminer, and Riesling are masters at bringing out those beautiful aromatic flavours.

Storage

All fresh fish and seafood should be stored in the refrigerator at a temperature of between 1 and 4°C and consumed by the date given on its packaging.
