Renowned for having the sweetest flesh of any variety, the shells of these intriguing crustaceans are a beautiful shade of blue when alive and turn bright orange when cooked.
Blue swimmers are commonly found in tropical waters in the intertidal estuaries of Australia where they spend their lives feasting on scallops, prawns, small fish, and molluscs on the grassy sea bed.
How to Cook
Blue swimmer crab meat can be used in the same way as you would standard white crab meat in salads, stir-fries, soups, and pasta sauces.
But why not give it a whirl in a classic crab linguine with a spicy tomato sauce.
What to Drink
Crab loves full-bodied white wines such as Chardonnay or Pinot Gris.
Chablis or a White Burgundy are also experts at bringing out crab meat’s delicate flavour.

Storage
All fresh fish and seafood should be stored in the refrigerator at a temperature of between 1 and 4°C and consumed by the date given on its packaging.
