Crayfish in Brine

£36

About:

Crayfish are a small, freshwater relative of lobster, with a texture and flavour that’s comparable to sweet langoustine.

They are eaten all over the world and go by many, many names including rawfish, craydids, crawdaddies, crawdads, freshwater lobsters, mountain lobsters, mudbugs and yabbies to name a few.

They are hugely popular in Sweden where they even have a day dedicated to them when people come together to eat mounds of crayfish and sing traditional Swedish drinking songs. Messy affairs in more ways than one but lots of fun.

How to Cook:

Once rinsed, our crayfish in brine make a quick and tasty addition to salads and sandwiches.

They can also be delicious in Asian-inspired noodle dishes that are packed with fresh coriander, mint and chilli, treated to a generous squeeze of lime and a sprinkled with chopped peanuts for added texture.

What to Drink:

How about taking some inspiration from the Swedes and serving your crayfish with copious amounts of aquavit and good humour.
