Although sadly cod has previously been the victim of overfishing, successful efforts to promote more sustainable fishing methods in recent years have meant we can continue to tuck into this star of the Great British fish and chip shop counter.
Frozen cod loins are great to keep on standby in the freezer for a quick and healthy mid-week dinner.
How to Cook
Batter it, bread it, bake it, fry it. This fish simply begs to be encased in a golden, crispy coating and served with a mound of chips.
But for a bolder and, dare we say, healthier take on a fish supper, why not look to Spain. Once it has been defrosted, simply pan fry your cod loin and serve on a hearty, tomato, chickpea and chorizo stew that’s rich with paprika. You’ll be amazed at how well the delicately flavoured cod stands up to those intense Spanish flavours.
What to Drink
Italian whites such as Pinot Grigio or a less oaky New World Chardonnay are a perfect accompaniment to cod’s subtle flavours.
However, if you’re looking for a way to elevate your classic fish supper, the lightness and acidity of Champagne or an English Sparkling Wine will cut through the oiliness of the dish and add an air of sophistication.
