Haddock is up there with cod as one of the UK’s favourite fish.

Found on both sides of the Atlantic, it is easily recognised by the black stripe running along its side and characteristic black splotch or “thumbprint” above its pectoral fin.

With its mild flavour and lean flaky texture, haddock has long been considered one of the stars of the Great British fish supper.

Like cod, haddock is a vulnerable species due to overfishing, so it’s important to only purchase this fish from sustainable sources.

How to Cook

Dust your haddock in flour and pan-fry in a small amount of oil for 2-3 minutes on each side until the flesh is opaque and flaky. Serve with herby, crushed new potatoes, a lemon, caper, and parsley dressing, and tender stem broccoli for a lighter, but no less delicious take on the classic fish and chips.

What to Drink

Lean and flaky fish like haddock pair particularly well with zesty and refreshing white wines such as Sauvignon Blanc, Verdejo, and Pinot Grigio.
