About

John dory are bizarre-looking fish with huge mouths, narrow bodies, and spiny dorsal fins.

Their name is strange too. In fact, it sounds more like the name of a bloke you met in the pub than a fish. It’s likely however that the name refers to its yellowish hue and is derived from the French words for yellow, jaune, and gilded, dorée.

John dory offer very comparatively little flesh for their size. However, they are highly prized by top chefs thanks to their pearly white, delicate, and firm yet flaky texture.

How to Cook

John dory goes fantastically well with Indian flavours and is happy to play the starring role in a curry sauce containing turmeric, coriander, cumin, chilli powder, tomatoes, onions, coconut milk, and a generous squeeze of fresh lime.

What to Drink

An unoaked Chardonnay would be a great match for john dory.

However, it is one of the few fish that holds its own when paired with lighter reds such as Californian Shiraz, Merlot or Cabernet Sauvignon.

Storage

All fresh fish and seafood should be stored in the refrigerator at a temperature of between 1 and 4°C and consumed by the date given on its packaging.
