Swordfish

About

Swordfish are unmistakable thanks to their long, flat bills.

A common myth surrounding swordfish is that they use their bills to stab their prey. However, it is more likely that this impressive appendage is used to slash and injure prey, making for an easier catch.

Swordfish has excellent, meaty flesh with a similar texture to tuna, and a mild, slightly sweet flavour.

How to Cook

If you’re planning a barbecue and want to offer a delicious fish option, grilled swordfish is the way to go.

Before cooking marinate your fish in garlic, lemon and olive oil. Then place on a searing hot grill for 5 minutes on one side and 3 minutes on the other. Serve with a summery Greek salad.

What to Drink

Full-bodied white wines such as Chardonnay and white Rhônes are ideal accompaniments for swordfish. The fish’s meaty texture also makes it possible to pair with a lighter red wine such as a fruity Pinot Noir.
