Bass are found in both marine and freshwater environments.
But because they tend to absorb the flavours of their surroundings, bass sourced from freshwater or polluted environments can often have an unpleasant, muddy taste.
We, therefore, sell sea bass to guarantee that their slightly meaty, white flesh has a clean, oceanic flavour.

This versatile fish can be pan-fried, baked, poached, cooked in a stew, or even in a curry.

What to Drink
Sea bass’s robust texture means it pairs better than most other white fish with more full-bodied white wines such as White Rioja or Loire Valley Chenin Blanc.
When playing with Asian flavours, you could also consider one of Alsace’s sweeter, more exotic whites such as Riesling, Gewürztraminer, or Pinot Gris.
